Blueberry Oat Muffins

    Rolled Oats, 1 cup, dry, yields (remove)
    Soy Milk, 1 cup (remove)
    Egg, fresh, 1 large (remove)
    Applesauce, unsweetened, .5 cup (remove)
    Sunflower Oil, 1 tbsp (remove)
    Flour, whole grain, 1 cup (remove)
    Cinnamon, ground, 1 tsp (remove)
    Baking Powder, 1 tsp (remove)
    Baking Soda, .5 tsp (remove)
    Salt, .5 tsp (remove)
    Blueberries, frozen (unsweetened), 1 cup, unthawed (remove)
    Cinnamon, ground, 1 tsp (remove)
    Granulated Sugar, 1 tsp (remove)


1. Soak oats in milk for one hour
2. Beat egg and add to oats with applesauce and oil, mix.
3. Sieve flour, raising agents, salt and 1tsp cinnamon in a bowl.
4. Add oat mixture and 'just' combine.
5. Add frozen blueberries and distribute gently and quickly.
6. Divide mixture between 6 muffin cases and sprinkle sugar/cinnamon mix on top.
7. Bake 18 to 20 mins at 180 degrees C.
