Cucumber Salad in Vinegar with Onion

Introduction

I hope you enjoy my cucumber and onion salad in vinegar recipe! I hope you enjoy my cucumber and onion salad in vinegar recipe!
Number of Servings: 6

Ingredients

    3-5 persian cucumbers (with peel) (or regular cucumbers without peel or "striped")
    1 red onion
    1/2 c. white vinegar
    1/2 c. water
    1/3 c. sugar
    dash of salt and pepper

Directions

Slice onions and cucumber very thin slices & place in shallow dish.
Stir together vinegar, water, sugar, salt, pepper and pour over onions and cucumber.
Cover and marinate at least an hour.
The longer this sits, the tastier it gets.
May be made a day ahead.

Makes about 6 servings.
(For more servings just add more cucumber and onion.)

    For DIABETICS you dont have to add sugar or salt. I squeezed a fresh Lemon or Lime over the salad. And if you like a little spice...white pepper, or cumin, or black pepper and maybe a dash of Red Pepper. - 2/22/13

    i just made cucumber in vinegar yesterday. i don't use sugar or water. just the vinegar, red onion, cucumbers, salt and pepper. its perfect. someone suggested to me to use apple cider vinegar.. - 8/7/12

    For a nice twist, I have also used flavored vinegars. Current favorite is roast garlic rice vinegar. I also now sometimes use stevia in place of sugar. - 5/27/12

    The apple cider vinegar was awesome. BUMPS2 suggestion of adding cumin was surprisingly good! My mom would always make this with white vinegar and sugar growing up but I'm liking these sugarless options even better!!! - 4/21/13

    I've made a variation of this recipe for about 42 years. Instead of sugar, I substitute w/Equal or Splenda & add caraway seed & celery seed. I've always made it and marinated this overnight to bring out the full flavor.

    With the Sugar substitution, you save about 19 cal (3.33 calories per serving - 4/21/13

    I use much less vinegar (apple cider) than water and skip the sugar. I've been eating it this way since I was about four. Makes me think of Summer at my Grandmother's. This way the calories are incredibly low! - 6/25/13

    I too make this with tomatoes and use apple cider vinegar. Maybe just a touch of sweetener, like apple cider mixed with the vinegar. We called this "summer salad" and its great alongside burgers right off the grill. Try adding a bit of dry mustard, too.

  • How can this have so many calories in it?....Sugar is the only thing significant amount of calories and even a third of a cup wouldn`t have 80 calories in it, or even 67 as the recipe says and its not even for the entire recipe, but per serving!....nuitritional value has got to be wrong! - 9/19/13

  • My mother made this and never used sugar. The salt and vinegar usually brings out the water in the cucumbers and no added water is really needed. We also put tomatoes in it if we plan to eat it within a few hours. I prefer the sweetened version, but use stevia or honey instead of sugar. - 6/25/13

  • I always had them in my childhood. We used Malt vinegar in England. Now I use rice vinegar, no sodium, no sugar. It is a smooth taste and not bitter so no sugar is needed. I buy Hot house cukes I do prefer the skin to be on, it makes it crispy to eat. Pat in Maine. - 6/25/13

  • try a little dill, traditionally, the tomatoes were salted and pressed under a heavy weight to remove the bitter juices. then rinsed and dressed with vinegar/lemon/lime. certainly not so much sugar.
