2 lbs green beans (you can also use frozen french cut beans) 1 tbsp canola oil 2 tbsp Urad dal (Indian grocery) 1/2 tsp black mustard seeds(Indian grocery) 1/4 tsp asafoetida(Indian grocery) 1/2 tsp cumin seeds 5-6 green chilis sliced
salt to taste
Wash & chop the green beans. I prefer them chopped fine. Heat oil in a sauce pan, add mustard and cumin seeds. When they are done spluttering add the urad dal and green chillis and asafoetida. Add the green beans. Cover and cook for a few min. And then cook uncovered (else the beans change color). Add salt to taste. And add the shredded coconut. You can cook until beans are soft. I prefer it al dente. Garnish with chopped cilantro.
