Italian Style Green Beans or String Beans about 1 pound. 1Bag frozen
Zucchini 1 bag frozen or 2 medium fresh sliced
1/2 Large vidalia onion sliced
1 pack sliced shrooms
good handful of baby carrots
2 stalks of celery chopped
1 can of tomato puree 16 oz
1 can diced tomatoes any variety you like I use unsalted
4- oz of water
Salt and pepper to taste
Olive oil about 2 tbsp
Basil dry 1 tsp or chop a few leaves up fresh
Parsley chop 10 sprigs or so or 2 tsp dry.
Saute mushrooms and onions till tender not mushy in olive oil.
Add tomatoes and 4 oz water.
Add Carrots,celery, parsley, basil, salt ,pepper, and any additional seasonings. Let it simmer for about 20 mins. Then add your beans and if fresh the zucchini simmer for 8-12 minutes moreIf using frozen zucchini then simmer 6 mins then add zucchini and simmer 5 mins more.
Serve as a side dish or a main meal with some great bread and add Parmesan or romano chz if you like.
