juice & zest of 1/2 a lime
1 clove garlic, minced
1 tsp olive oil
light salt & pepper to taste
3 oz peeled and deveined shrimp
1 Tbsp fresh basil, chopped
Marinate shrimp in the fridge for at least 2 hrs. Remove from marinade and thread on skewers 15 minutes before grilling.
Preheat grill. Grill skewers 2-3 minutes per side, or until shrimp are pink and curled.
Sprinkle with basil. Serve with lime wedges.
