Spring Mango Chicken Salad

Number of Servings: 4

Ingredients

    6 c. salad greens
    2 c. fresh blueberries
    1 mango, pitted, peeled and cut up
    12-16 oz. skinless chicken breast tenderloins
    dash of salt
    dash of black pepper
    2 Tbsp. butter
    1 garlic clove
    2 c. broccoli florets
    1/2 c. Italian salad dressing
    crumbled blue cheese (optional)

Directions

On a serving platter, arrange greens. Top with blueberries and mango; set aside.
Melt the butter in the microwave and mash the garlic clove into melted butter. Season chicken breast tenderloins with salt and pepper. In a large skillet cook chicken in 1 Tbsp. of the hot garlic butter over medium heat for 6-8 minutes or until no longer pink, turning once. Transfer chicken to a cutting board; slice. Arrange chicken on salad.
In the same skillet cook broccoli in the remaining 1 Tbsp garlic butter over medium heat for 4-6 minutes or until tender. Place on salad. Drizzle salad with Italian dressing. Sprinkle with blue cheese.
