Introduction

My friend started telling me about caponata when I was wondering what to do with the single small eggplant I was able to harvest from our garden this year. She didn't have a recipe, but gave me a list of ingedients. Tried to figure it out this afternoon and it turned out good. She suggested eating it with pita as a snack or appetizer. Ingredients

    i small eggplant, cubed (about 1.5 cups)
    2 stalks celery, diced
    1 small onion, diced
    1/2 bell pepper
    1 large plum tomato, diced, seeds and juice included
    1 clove minced garlic
    1 Tbsp oregano
    1 tsp Splenda
    1/3 cup raisins
    1-2 Tbsp capers, drained
    1 Tbsp chopped black olives
    sprinkle of red wine vinegar, to taste
    salt and pepper, to taste

Directions

Heat olive oil in large skillet over medium heat. Add celery and cook about 2 minutes. Add eggplant and half onion, cooking another 2-3 minutes. Add bell pepper and cook 5 more minutes. Add rest of onion and garlic and cook until translucent. Add tomato,raisins, Splenda, and oregano. Simmer for about 20 minutes so flavors have a chance to blend. Add capers and olive and heat through. Stir in salt, pepper, and red wine vinegar. Remove from heat. May be eaten warm or cold. (I hear the flavors blend even nicer after a few days in the fridge and that it is wonderful served with fresh mozerella, but I have not tried that yet.)

Makes 4 very generous servings.

    This was very good. I imagined it to be a little juicier, so maybe next time I'd add some type of liquid. Very good! - 7/29/08
