Lemon and Ginger Chicken

Introduction

Ingredients

    2 whole chicken legs (skin removed)
    4 peeled lemons (keep skin for grating)
    1 tsp minced ginger
    1 tsp minced garlic
    1/2 cup red or mixed peppers (finely diced)
    1 chicken stock cube (or 1/2 cup home made stock)
    water

Directions

Create 1/2 cup stock. Add lemons, garlic and ginger. Blend and set aside. Place chicken legs in baking dish and cover with peppers. Cover with about a 1/2 tsp grated lemon rind. Add blended ingredients. Cover with foil and bake in moderate oven for 40 minutes.
