Eggs in Potato Nests

Ingredients

2 oz Gimme Lean ground sausage
3/4 C mashed potatos
1/8 C Wheat germ
1 egg white or 2 Tbsp Eggbeaters
Parsley and Thyme
2 eggs
Black pepper to taste
Directions
1.) Preheat the oven to 350 degrees
2.) Cook the sausage in a pan with a little olive oil; set aside on a paper towel to drain any excess grease.
3.) Combine the mashed potatoes, wheat germ, egg white, and sausage (or a vegetarian varient). Also add the parsley & thyme to taste
4.) Form the mixture into two balls, and place them on a lightly greased baking sheet
5.) Press a hole in each ball, but be careful not to go through to the pan
6.) Crack an egg into the centre of each hole; with a large egg, some of the white will overflow which adds a nice touch, but use a medium egg if you would rather that not happen
7.) Place in oven for 15 minutes; then, set to broil for 2. Grind pepper over egg to complete
