Baked (breaded) Cod Fillets

Ingredients

    .25 cup Flavored Bread Crumbs
    1 TBS. Basil
    1 TBS. Bay leaves (crushed)
    1 TBS. Garlic powder
    2 TBS. Grated Parmesan Cheese
    Salt
    Pepper
    1 lb. Cod Fillets

Directions

Preheat oven to 375.

Assemble a wire cooling rack on top of a cookie sheet & spray with nonstick cooking spray.

Place bread crumbs in shallow dish (I use a pie plate). Add all seasonings & cheese, and thoroughly mix. Press cod into bread mixture and evenly coat. Place coated fillets onto rack and bake for 10 - 15 minutes. (I turn the broiler on for the last couple minutes to crisp the fillets!)

Remove from oven & enjoy!!

  • Made this last night. VERY GOOD. Substituted panko for the bread crumbs, that's what I had. Followed recipe on the rest. Lots of garlic was a bous for us. I am having it on double the fiber english muffin with laughing cow cheese, lettuce and onion todayusing the leftover piece. Loved it. - 11/9/10

  • I loved this! I actually forgot to use the oil and instead sprayed butter spray first and then coated the fish. Perfection! - 2/25/09

  • I'm sorry to say that we didn't care for this too much. Now it was our 1st time cooking cod, but I don't think my bay leaves crushed well enough, and the fish didn't cook thoroughly for 20 mins, and by the time I put it back in and recooked it, it was like eating rubber. We both tossed ours out. - 9/28/08
