IntroductionThis salad is a delightful dish to have on a hot, summer day. Goes great with a wheat roll, and grilled fish. This salad is a delightful dish to have on a hot, summer day. Goes great with a wheat roll, and grilled fish.
2 cups kale, chopped into bite size pieces
2 cups fresh spinach
1 cup fresh broccoli florets, chopped
1/2 cup raw onion (preferably sweet), chopped
1 cup celery, chopped
1 cup carrots, julienned
2 cups fresh sweet apple, chopped
1 fl. oz. lemon juice (sprinkled and tossed with chopped apples)
1 cup raisins
1 cup sweet cherries (preferably fresh), pitted and halved
1/2 cup seasoned rice vinegar or other salad dressing
1 cup seasoned croutons
1 cup shredded cheddar cheese or other kind if preferred
Place cherries in another container and place in refrigerator until ready to serve.
Toss together in a large bowl the kale, spinach, broccoli, onion, celery, and carrots. Add the raisins and dressing; toss again.
When ready to serve; gently toss in the apples, cherries, cheese, and croutons and place in salad bowls. Enjoy!
