Introduction

Make this ahead of time and then refrigerate for a quick, protein-packed breakfast that's also portion-controlled. Top with salsa (optional) and serve with toast for a complete breakfast. Number of Servings: 9

Ingredients

    5 eggs
    2 Tbsp low-fat milk
    1 cup diced tomato
    2 oz. goat cheese, crumbled
    2 cups chopped broccoli, fresh (or frozen and thawed)
    salt and pepper to taste

Directions

Mix eggs and milk in a bowl. Add crumbled goat cheese and chopped vegetables. Season with salt and pepper.
Spoon mixture into muffin tins coated with cooking spray.
Baked at 350 degrees for about 15 minutes or until "set" and golden on top.

You can refrigerate and reheat these in the microwave for a quick breakfast or snack. Microwave on high for approximately 30 seconds. Serve warm.

Makes 9 "mini" frittatas.

    Variation: Instead of muffin tins: small fry pan sprayed with pam and mixture poured from a measuring cup to portion it out (8 servings) Immediately top it with a whole wheat flour tortilla wrap. Cook it about one minute on high, flip it out of the pan, roll and wrap in saran wrap. Finger food! - 8/4/08

    Very good and quick. I sauteed onions, mushrooms, green peppers and spinach, then mixed that with the egg. I was able to make 10 of them. This will be a great breakfast on the go in the mornings. - 8/9/08

    I made these this afternoon for brunch for me and my husband. I changed it a little we dont like goat cheese so i used 3 teaspoons of fat free cottage cheese. I also added frozen red, yellow and green pepper along with some mushroom. I sauted the veges also. We loved it!!

    If you are not a veggie eater or don't like the texture of broccoli, stick it in the food processor and chop it up really fine. You really won't notice the veggie then. - 3/1/09

    These are great. I didn't have broccoli so used aspargus (blanched them first) and added a little chopped onion and a bit of mustard (I find egg things get a little kick from that.) These are yummy and versatile. I'll freeze a few for meals through the week. - 4/19/09

    These are great! I put them in those little muffin papers, so getting them out of the pan was easier. I used ham, feta cheese, chives and parsely...didn't have any green vegetables today. I used 6 eggs and the recipe only made 8; perhaps my muffin pan is bigger? - 7/19/09

    Doubled the recipe. Sauteed separately different vegs and potato. My daughter and I made our own combinations and each one is different. Topped each one with cheese (different types) and a few with bacon pieces. Tried using the paper baking cups instead of oil. Works great! These are wonderful! - 6/28/09

    Just tried this for brunch. I'll probably do it again, with changes. First, I like the idea of sauteeing the veggies first. Chop veggies VERY fine, and add seasoning. A bit bland. Had to add salsa to spice it up a bit. Over all a good idea (LOVE the idividual servings - fun). - 8/9/08

    I loved theses! I couldn't find my muffin tins so I ended up cooking in cookie pan and cutting afterwards into a size that would fit into the sanck size ziplock bags. Now I just grab this in the morning before work. My supervisor even eats them with me! lol Have to bring two...... - 7/20/09

    These were delicious! I think I need a silicone muffin form though, as even with spray mine got a little stuck. The variation possibilities on this are endless! And I totally wouldn't have thought that there was enough liquid when I poured them, but they were perfect! (Had to cook a touch longer) - 6/21/09

    Incredible!! I love these and so did my son! They will be great for making ahead for both of us to have a quick breakfast that either one of us can make. You could easily crumble one in to a wrap or tortilla after heating in the microwave. That's how my son would do it..easier than frying. Great!!! - 6/20/09

    These are so cute! I switched a couple of ingredients based on what I had. I also added onions and sauted some of the vegetables with olive oil. Based on other suggestions I also added a little hot sauce. I had to cook mine for an twenty minutes not fifteen though. - 8/10/08

    Couldn't find my regular muffin tins, so I broke out the mini-muffin tins, and have frittatta bites instead! One batch made 32 mini-muffin-size frittatas, so 3 is a 'serving' (roughly). Flavor was good, although (oops) I omitted the salt and pepper. Think next time, I'll use spinach instead of broc! - 3/29/10

    I agree with a previous comment ...use two whole eggs and 6 egg whites. This recipe is versatile...you can use whatever veggies you have in the fridge. As far as adding cheese and bacon...remember we are trying to eat healthy to lose weight...that would add way too many calories and fat. Focus. - 7/9/09

    I hate cleaning egg out of my muffin tins. Can you put these in muffin cups first? Maybe I could spray the tins and add a dusting of flour to prevent the egg sticking to the pans. Any suggestions? I did spray when I made these the first time but still had egg residue to clean up. - 5/17/09

  • This is EXCELLENT! I added one more egg and I divide it between 12 muffin cups (WHO has a muffin pan with NINE??? LOL) and I eat FOUR of them for a meal. Excellent way to get veggies in at the start of your day. I will say that I found that it needs to cook for 30 - 35 minutes. - 3/16/14
