Ten Grain Muffins

Introduction

Number of Servings: 12

Ingredients

    1 Egg
    1/2 Cup Turbinado Sugar
    1/3 cup Canola Oil or butter
    1 Cup whole wheat pastry flour
    1 tsp salt
    1 tsp baking powder
    1 tsp baking soda
    1 Cup Bob's Red Mill 10 Grain Cereal
    1 Cup blueberries, if desired
    1 1/4 Cup buttermilk or sour milk

Directions

Place cereal and milk into a bowl and let stand for 10 minutes to soften. Add remaining ingredients. If using butter, cream it with the sugar and egg prior to adding it to the cereal. Stir until just mixed. Spoon into greased muffin tin. Bake at 400for 15 minutes
