oil, onion, quinoa, curry powder, salt, zucchini, carrot juice, peas, scallions, cashews, and cilantro
Heat the remaining tbs oil in a 10in skillet. add the chopped onion, zucchini, and remaining 1 1/2 tsp curry powder. Cook, stirring frequently, over medium heat for 5 min. Add 1/2 c water, the carrot juice, and 1/2 tsp salt. Cover and simmer for 5 min, then add the peas and scallions and cook for a few minutes more. Stir in the vegetables and cashews into the quinoa. Taste for sale and season with pepper. Serve in soup plates and garnish with cilantro.
