Chicken in Mango Sauce

Ingredients

    * 9 oz. chicken thighs
    * Mangos, 1 cup, sliced
    * *Coriander, dried, 1 tsp
    * Garlic minced, 3 tsp
    * Pepper, black, 1 tsp
    * *Cumin, ground, .25 tsp
    * Cinnamon, ground, 1 tsp
    * Low Sodium Soy sauce 2 tbsp
    * Worcestershire Sauce, 1 tsp (
    * Plain Fat Free Yogurt, 8 oz
    * Olive Oil, 1.5 1tsp

Directions

1. Fry all spices in the oil with half the garlic.
2. Either puree or mash the mangoes and mix with the spices
3. Add soy sauce and Worcestershire sauce and cook for approx. 10 minutes.
4. Meanwhile, dice chicken and saute (using PAM) along with the rest of the garlic, until opaque
5. Add to mango sauce and simmer for 10-15 minutes.

Serve over rice and top with 1/2 the yogurt.

I made this once with thighs and once with breasts. . .great either way!!
