Waldorf Chicken

Number of Servings: 4

Ingredients

    6 small boneless, skinless chicken breast halves
    1 c. apple juice
    1 Tbsp. lemon juice
    ¼ tsp. salt
    ¼ tsp. ground ginger (or to taste)
    1/8 tsp. garlic (or to taste)
    1 Tbsp. cornstarch
    2 c. chopped red apples
    1 c. chopped celery
    3 Tbsp. raisins
    1 Tbsp. chopped green onion

Directions

In a large skillet, combine chicken breasts, ½ c. apple juice, lemon juice, salt and ginger and heat to boiling. Reduce heat, cover and simmer until chicken is done (about 20 min.). Remove chicken and keep warm. Mix remaining apple juice and cornstarch and stir into skillet. Heat to boiling stirring constantly. Stir in apples, celery, raisins, and green onion. Heat. Dice chicken and return to skillet. Serve.
