"Not Your Mom's" Tuna Casserole

Ingredients

    1 pkg. Fiber Gourmet Light Macaroni & Cheese Dinner (www.FiberGourmet.com)
    2 6oz. cans Albacore Tuna packed in water (drained)
    1 C Shelled Frozen Edamame (thawed)
    1-1/2oz. Ready-to-Eat, Julienne Cut Sun Dried Tomatoes
    1/8 tsp. onion powder
    Fresh ground black pepper (to taste)
    2 slices Kraft Fat Free Sharp Cheddar
    2 Tbsp. Whole Wheat Panko Breadcrumbs

Directions

Prepare the Macaroni & Cheese dinner as per the directions on the box (DO NOT add the butter or margarine!). Stir in the tuna, thawed edamame, sun dried tomatoes, onion powder and fresh ground pepper to taste. Put the entire mixture into a casserole dish lightly sprayed with PAM. Tear up the slices of cheese and evenly disperse over the top of the mixture and then sprinkle with the panko breadcrumbs. Heat in a 350 degree oven until the cheese is melted on top and casserole is heated through (about 10 minutes).
