Jeremy's Italian Pasta Salad

Introduction

This is my husband's favorite pasta salad... the only one he ever wants to make, take to a potluck, or eat!! I've changed it to be a bit healthier by making it with whole wheat pasta and light salad dressing... still very good! Number of Servings: 15

Ingredients

    1 (12 oz) package whole wheat pasta (Healthy Harvest)
    1 green pepper, chopped
    1 yellow pepper, chopped
    1 red pepper, chopped
    1 large purple onion, chopped
    1 bottle Salad Supreme (McCormick)
    1 (8 oz.) bottle Light Italian salad dressing
    black olives, sliced (as much as you prefer, I used 1/2 cup for calculation)

Directions

Cook pasta per package directions. Drain and cool under running water before adding other ingredients. Add peppers, onion, and black olives to pasta. Mix Italian dressing and Salad Supreme in a bowl, then toss into pasta mixture. Makes a lot! (calculated as 15 servings)

*Hint: I think this is best made one day ahead of time, and stored in the refrigerator, to allow flavors to soak into the pasta.
