12 red potatoes, skinned and diced
2 Tbsp. olive oil
1 medium onion
1 green bell pepper (or any mild pepper)
1 cup sweet corn kernels
While the potatoes are boiling, heat the olive oil in a medium skillet, saute the onions and peppers. Add the corn and potatoes. Heat through and add salt and pepper to taste. Serve on tortillas with salsa, or with a poaches or fried egg.
Makes 6 servings (1 cup each).
