Black bean burgers

Introduction

My daughter made this up after looking for a recipe like one she saw with roasted beets. This was really good! My daughter made this up after looking for a recipe like one she saw with roasted beets. This was really good!

Ingredients

    1 can black beans rinsed
    1/2 cup cauliflower
    1/2 cup onion
    1/2 cup bell pepper
    1 cup quinoa, cooked
    2 eggs lightly beaten
    salt and pepper
    Tony Chaceries creole seasoning

Directions

Drain and rinse black beans, put veggies on a pan coated with pam, season lightly and roast in 350 degree oven until tender
mash bean together in bowl, put roasted veggies in food processor and process until chopped very fine (not pureed)
mix all ingredients together, shape into patties and bake in moderate oven for about 20 minutes.

Brown rice can be used for quinoa, veggies can vary but don't use veggies that are too wet, like summer squash.
