4 boneless, skinless chicken breasts
3 bell peppers - I use multi colored - cut into strips
1 large onion - cut into strips
5-6 cloves of garlic
juice of 5-6 lemons
2 tbsp olive oil
1-2 cans stewed tomatoes - smash these up a bit
cooked rice of your choice
When ready to cook:
spray skillet with pam and cook your onions and garlic until they wilt.
Add your chicken, including the marinade, and cook on high heat until the chicken in nearly cooked through.
Add your pepper strips and your stewed tomatoes, cover and cook until your veggies soften.
Serve over rice - in this recipe, the calories are calculated with white rice at 1/2 cup per serving.
