White Chicken Chili in 30 minutes

Introduction

A fast and healthy alternative to traditional chili, that is made with ground chicken. Great, served over brown rice.

A fast and healthy alternative to traditional chili, that is made with ground chicken. Great, served over brown rice.

Number of Servings: 8

Ingredients

    2 Tbsp. olive oil
    1 onion, chopped
    3 cloves fresh garlic, minced
    1 bell pepper (yellow or your choice) chopped
    1 pound ground chicken
    2 15-oz cans organic pinto beans, drained and rinsed
    1 small can mild diced green chili
    1 can petite diced tomatoes
    1 cup organic free range chicken broth
    1 Tbsp. tomato paste
    1 Tbsp. chili powder
    2 tsp. cumin
    salt to taste


Directions

In a non-stick deep skillet, saute onions, bell pepper and garlic, till soft.
Add chili powder and cumin and cook for 2-3 more minutes.

Push vegetables to one side and cook chicken, chopping to small pieces 3-5 minutes.

Combine vegetables and chicken.
Add chicken broth
Add beans, tomatoes and green chilis
Add tomato paste

Simmer for about 10 minutes and serve over brown rice.
