Egg, fresh, 4 large
*Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.)
Mozzarella Cheese, part skim milk, 6 oz
Pepper, black, 2 tsp
Salt, 1 tsp
Ham, extra lean, (5% fat), 1 cup, diced
1/2 cup milk 1%
Boil potatos till tender. Spray no stick on to pan and place boiled potatos on the bottom. Beat eggs and add salt and pepper to taste and add cheese, and milk. Pour egg mixture over potatos and place in oven at 350 till done about 30-40 mins.
