IntroductionUse organic ingredients when possible. Use organic ingredients when possible.
3 vine-ripe tomatoes
1 cucumber with peel
3 stalks of fresh basil
2 Tablespoons of lemon juice
2 Tablespoons of olive oil (extra virgin, first cold pressed)
1/4 teaspoon of cumin
Optional, any combination of:
1/4 cup prepared bulger wheat (or other whole grain)
1 bell pepper
1 bunch parsley, chopped
2 stalks chopped celery
plain yogurt (added to individual servings)
Place all ingredients in a bowl, add the lemon juice, olive oil, and cumin and mix.
Cover and refrigerate several hours so flavors can mix. Serve cold.
