Number of Servings: 4


    1 can chick peas (garbanzo beans) drained, reserving liquid for thinning if necessary

    2 Tablespoons of tahini (sesame seed paste)

    1/2 lemon using its juice and its zest

    1/2 teaspoon of cumin

    1 Tablespoon roasted red bell pepper

    1 Tablespoon extra virgin olive oil


Drain chick peas - reserving liquid to thin hummus if necessary.

Place in blender or food processor:

Drained chick peas
Tahini sauce
Juice and zest from 1/2 lemon
Roasted red pepper

Blend until smooth. Do not add extra liquid too soon - the mixture is thick and requires constant scraping until well blended. Once ingredients become paste - add a little reserved chick pea liquid IF NECESSARY or to desired consistency. I prefer my hummus to be extra smooth and thick.

Once blended to desired consistency - scrape into container that can be sealed tightly. Add the olive oil and mix. Seal and refrigerate or use immediately. Refrigerate unused portion and use within one week.

Serve with fresh vegetables

Makes 4, 1/2 cup servings
