Introduction

This is my Mom's version of the Egg McMuffin. She would make extras and individually wrap each sandwich in plastic wrap and place them in the fridge. This made them very convenient to warm up in the morning when you are running short on time. These make great sandwiches for any meal not just breakfast. This is my Mom's version of the Egg McMuffin. Ingredients

    4 Wheat English Muffins
    4 Large Eggs (Beaten)
    4 Slices American Cheese
    4 Pieces of Breakfast Meat (Optional, Not Included in Nutritional Info)

Directions

Spray a small non-stick skillet with 0 calorie cooking spray and cook eggs (do not scramble). Cut English muffins in half and toast each half. Cut egg like a pizza into 4 even pieces. Assemble the sandwiches by placing one piece of egg, meat (optional), and cheese on one half of the English muffins and top with the other half. Makes 4 Sandwiches
