IntroductionSpark had a "featured" recipe today for Broccoli and Cheese soup. I'm a vegetarian, and theirs contained chicken broth. I searched and couldn't find a good vegetarian option on Spark, so decided to share mine. Spark had a "featured" recipe today for Broccoli and Cheese soup. I'm a vegetarian, and theirs contained chicken broth. I searched and couldn't find a good vegetarian option on Spark, so decided to share mine.
1/4 cup butter
1/2 onion, chopped
1 Tbs jarred chopped garlic (more to taste - I like the roasted garlic)
10 oz package frozen chopped broccoli
2 (14.5 ounce) cans vegetable broth
.5 lb Velveeta - cubed
1 cup skim milk
1/3 cup cornstarch
1/2 cup water
2. Cook onion and Garlic in butter until softened.
3. Add Broccoli and broth.
4. Simmer until broccoli is tender about 5-10 minutes.
5. Reduce heat, and stir in cheese cubes until melted.
6. Stir in milk.
7. In a small bowl, stir cornstarch into water until dissolved.
8. Stir into soup; cook, stirring frequently, until thickened.

Thanks for this recipe, it was really good, and so easy to make. I wasn't sure how much was a serving, so I only had a couple cups, but it was very filling. - 10/14/08

I am glad that you enjoyed it. I don't remember how much is in a serving. The next time I make it, I will measure it out. There are 6 of us in our family and I usually just divide it between us.
