Introduction

A hearty filling soup that's a great choice for vegetarians or those who are trying to fill up on few calories. You can add any veggies you want to and make it even heartier. The soup is at its best when it's positively dense with vegetables.

This recipe makes a TON and is great for keeping in the fridge as a snack or a full meal.

Number of Servings: 16

Ingredients

    2 lb carrots, chopped
    3 large green onions
    2 bunches of celery, chopped
    2 green bell peppers, sliced
    2 cans stewed tomatoes
    2 cans green beans, drained
    1 box or large can of beef broth (low fat)
    1 packet of Lipton Chicken Noodle soup mix

    1 T Thyme
    2 tsp Salt
    1 tsp Pepper
    2 Bay Leaves, whole
    Beef Bouillon to taste (2 T)

Directions

Throw everything into a large soup pot, including the broth. Add water until vegetables are covered by at least an inch. Bring to a fast boil and boil for 10 minutes. Lower heat and allow to simmer for another 20 minutes, stirring occasionally.

Makes at least 10 2-cup servings (that's a conservative guess). Refrigerate leftovers.
