Chicken and ground soy Bolognaise

Introduction

Ingredients

    * Onions, raw, 1 cup, chopped
    * Basil, 1 leaves chopped- fresh
    * Bay Leaf, 0.5 g
    * Yellow Peppers (bell peppers), 45g
    * NN Stewed tomatoes Canned 1X can is 796 ml
    * Bolthouse farms Carrot chips - 85 g
    * Compliments Extra lean ground Chicken, 450 g
    * Primo tomato paste, 5 tbsp
    * Water, tap, 1 cup
    * Veggie ground round( Italian) - 340 g
    * Olive Oil, 1 tbsp

Directions

serving size : 1/2 cup of sauce

METHOD:
Preheat 1 tbsp olive oil in cast iron pan or heavy bottomed saucepan
Saute onions and peppers till soft , add carrot chips and fresh basil leaf chopped and about 1 - 3 bay leaves.
Add ground chicken and brown, once browned , add rest of ingredients( except soy ground) and bring to boil, reduce heat and simmer 30 min. Add soy ground to bolognaise last few minutes of cooking as oer nstructions on pkg.
Serving suggestion would be Linguine or whole wheat spaghetti. ( this is not included in nutritional info)
