Sara's Spanish Style Rice

Introduction

Great as a side dish or as a burrito filling. Can add a can of kidney beans for a main course meal. Great as a side dish or as a burrito filling. Can add a can of kidney beans for a main course meal.

Ingredients

    1 Cup White Rice long grain
    1 TBSP Coconut Oil
    3 Scallions cut up (green onions)
    3 cloves of garlic diced
    8oz can tomato sauce
    2 cups water
    1 Tbsp chili powder
    1 tsp cumin seeds
    1/2 tsp oregano
    1/2 cup diced tomatoes

Directions

Heat coconut oil in pot over medium heat. Add rice, green onions, garlic. Cook until rice is opaque. Add remaining ingredients bring to a boil then cover and simmer 20 mintues until liquid is absorbed.
