Introduction

Try this light zucchini salad atop a bed of baby spinach, with whole-wheat pasta, or with a sprinkling of fresh diced tomatoes. Try this light zucchini salad atop a bed of baby spinach, with whole-wheat pasta, or with a sprinkling of fresh diced tomatoes.
Number of Servings: 4

Ingredients

    2 large zucchini, shredded
    2 T tomato paste
    1/4 cup reduced fat sour cream
    salt and pepper to taste
    10 basil leaves, shredded

Directions

Shred zucchini using food processor or box grater. Salt to taste and squeeze out excess water. (Either place in a strainer or a dish towel to get rid of water.) In a large bowl, mix tomato paste and sour cream until well mixed. Add chopped basil and salt and pepper to taste. Add zucchini, toss well, and serve. For best results, allow flavors to mix for a few hours.
Serves 4.
