Introduction

Number of Servings: 4

Ingredients

    # Zucchini, 1 cup, chopped
    # Red Ripe Tomatoes, 1 large whole
    # Onions, raw, .5 cup, chopped
    # Parmesan Cheese, grated, .33 cup
    # *Heart Smart Bisquick (mix only), .5 cup
    # Milk, nonfat, 1 cup
    # Egg substitute, liquid (Egg Beaters), .5 cup
    salt & pepper

Directions

Heat oven to 400 degrees
Spray 8 inch square baking dish or 9 inch Pie plate with cooking spray
Sprinkle zucchini tomato onion and cheese in dish

In medium bowl stir remaining ingredients until blended
Pour over veggies and cheese
Bake about 35 minutes or til knife comes out clean
Cool 5 minutes
