Apple flax muffins

Introduction

Number of Servings: 12

Ingredients

    1/4 c HODGSON MILL MILLED FLAX SEED
    11/2 c HODGSON MILL 50/50 FLOUR
    1/4 c. brown sugar splenda
    1/4 c. splenda
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 egg, beaten
    1 1/2 c finely chopped apples
    3 Tbsp. vegetable oil
    1/2 c skim milk
    1/2 c chopped nuts
    Blend dry ingredients together in a bowl. In a separate bowl; combine egg, vegetable oil and milk. Add dry ingredients to egg mixture and stir until just blended. Fold in apples and nuts. Batter will be thick. Fill well-greased muffin cups 2/3 full. Bake at 400 degrees F. for 18-20 minutes or until top springs back when touched.

    Yield: 12 muffins.
