Lower Fat Zucchini Casserole

Introduction

This recipe can easily be increased or made into a complete meal with the addition of cubed, baked chicken breasts. This recipe can easily be increased or made into a complete meal with the addition of cubed, baked chicken breasts.
Number of Servings: 4

Ingredients

    2 Medium zucchinis (may also use squash) sliced
    3/4 cup sliced carrots (pre cook them a bit if you would like)
    1/2 Cup chopped onions
    2 TBS light margarine spread
    1/2 10 oz can of 98% Fat Free Cream of Chicken Soup
    1/4 Cup reduced fat sour cream
    1 cup cubed herbed stuffing

Directions

Saute onion in 1.5 TBS of margarine. Stir in 3/4 cup of stuffing mix, sour cream, and soup.
Gently stir in veggies.
Put in lightly greased casserole dish.
Melt remaining margarine in pan and add last 1/4 cup of stuffing.
Toss gently and sprinkle over casserole.
Bake 30-40 minutes in 350 degree oven.
