Marinated Salmon with Kiwi/Mango Relish

Introduction

This recipe is perfect for the "want to eat fish but don't like the taste of fish" fan. It looks amazing on the plate, its quick, and perfect for dinner parties! Your guests will be impressed!

Serve over mixed greens, steamed couscous or on toasted sour dough bread for a bistro style fish sandwich!

Number of Servings: 1

Ingredients

    4-6 ounce salmon filets (about 1 inch thick)
    1 tbsp honey
    2 tsp low-sodium soy sauce
    1 tsp extra virgin olive oil
    1/4 tsp cracked black pepper
    Cooking Spray

    Relish
    1/2 cup peeled diced mango
    1/2 cup cubed peeled mango
    1/4 cup chopped fresh cilantro
    1/4 cup fresh squeezed orange juice

Directions

To prepare salmon filets, combine first 4 ingredients in a large zip-top plastic bag. Add fish to bag; seal. Marinate 10 minutes, turning occasionally.

While fish marinates, heat grill or large nonstick skillet over medium-high heat. Remove fish from bag, discarding marinade. Coat pan with cooking spray. Add fish, and cook 5 minutes on each side or until the fish flakes easily when tested with a fork.

While fish cooks, prepare the relish. Combine mango, kiwi, cilantro and orange juice.

Place 1 salmon filet on plate and top with 1/4 cup of relish.

Yields: 4 servings
1 serving = 1 filet with 1/4 cup relish
