Blueberry Oatmeal Bake

Introduction

This is a great healthy breakfast option and it makes a lot so if time is never on your side in the mornings you can make this Sunday night and have plenty for several days. It also freezes well. This is a great healthy breakfast option and it makes a lot so if time is never on your side in the mornings you can make this Sunday night and have plenty for several days. It also freezes well.
Number of Servings: 10

Ingredients

    4 cups of frozen or fresh blueberries
    2 Tbsp. fresh lemon juice
    1 (18oz) container of regular oats
    3 large eggs, beaten
    1/2 Cup firmly packed brown sugar
    1 1/2 cups unsweetened applesauce
    1 Tbsp. ground cinnamon
    4 tsp. baking powder
    1 tsp. salt
    1 1/4 cups water
    1 cup skim milk
    1/4 cup melted butter

Directions

1. Toss blueberries in 1 Tbsp. fresh lemon juice and spread evenly on bottom of lightly greased 13 x 9 inch baking dish.
2. Combine oats, next 9 ingredients, and remaining 1 Tbsp. lemon juice in large bowl, stirring until well blended. Pour oat mixture evenly over blueberries.
3. Bake covered, at 350 for 30 minutes; uncover and bake 20 more minutes or until golden brown and set.
