Introduction

Chunky, creamy potato salad with sour cream, mayo and crumbled bacon garnish Chunky, creamy potato salad with sour cream, mayo and crumbled bacon garnish
Number of Servings: 4

Ingredients

    2 lbs. red potatoes
    3/4 c. low fat sour cream
    3/4 c. low fat mayonnaise
    3/4 c. finely chopped celery
    1/2 c. thinly sliced scallions
    crumbled bacon (for garnish)

Directions

Cover potatoes with salted water. Bring to boil and reduce heat. Simmer until tender when pierced with sharp paring knife, approx 15 min. Drain well. In large bowl, whisk together sour cream and mayonnaise. Fold in warm potatoes, celery and scallions. Season with salt and pepper. Cover and refrigerate for one hour. Garnish with bacon and more scallions if desired.

  • Made this last night with some variations, adding green olives, boiled eggs and some cheese. Delicious! But I need to season it some more next time. I didn't have any dill. - 9/26/09
