Italian Chicken and Green BeansSubmitted by: WILDROSES1964
4 Chicken Thighs, boneless and skinless
1 cup chopped onion
1Tbsp Olive oil
1 tsp garlic, minced
2 (14.5 oz) cans French Style Green Beans (drained)
1 (14.5 oz) can Hunts Fire Roasted Tomatoes with Garlic (undrained)
1.5 tsp italian seasoning
1 Tbsp Balsamic Vinegar
2 oz Feta Cheese (optional)
While onions are cooking, cut chicken thighs into bite size pieces. Add to onions in skillet along with the garlic, and saute until chicken is no longer pink.
Add the green beans, tomatoes, and italian seasoning. Cover and simmer 20 minutes, or until chicken is cooked all the way through. Add balsamic vinegar and simmer 5 min more.
Ladle into bowls and if desired top each serving with .5 oz of feta cheese.
