Baked Oatmeal Cherry Bars

Introduction

I've never been able to abide traditional oatmeal, so this is an excellent alternative, providing the benefits of oats without the porridge-like texture of normal oatmeal. Number of Servings: 12

Ingredients

    4 cups rolled oats
    3 tsp. baking powder
    1 tsp. salt
    2 cups skim milk
    4 eggs, beaten
    1 cup unsweetened applesauce
    1 cup brown sugar
    2 cups dried cherries

Directions

Preheat oven to 325 degrees Fahrenheit.

Combine the oatmeal, baking powder and salt in a large mixing bowl. Mix in the milk, eggs, applesauce brown sugar and cherries. Pour mixture into a greased 9 x 13 pan. Bake at 325 for 45 minutes. Cut into 12 bars.

Note: The nutrition information is based on dried cherries, but most any dried fruit can be substituted: raisins, blueberries, even chopped larger fruits such as apricots.
