Introduction

Crispy and Sticky Chicken Thighs with squashed new potatoes and tomatoes.

Serve w/ a side sald of rocket w/ lemon and onion.

Ingredients

    800 g new potatoes
    1 salt
    1 pepper
    1 kg chicken thighs
    10 ml olive oil
    600 g cherry tomatoes
    5 g fresh oregano
    40 ml extra virgin olive oil
    10 ml red wine vinegar

Directions
Par boil the potatoes

Bone and fry the chicken thighs with some olive oil and seasoning skin side down.

Prick the tomatoes with a sharp knife and add to the potatoes for last 45 secs of cooking time.

Remove the potatoes and tomatoes from the water.

Skin the tomatoes

Gently break the potatoes by squashing them

Add the chicken, toms and pots to a large oven proofed dish.

Make dressing - Break up the oregano leaves and put into a flavour shaker, add 4 tbsp ev olive oil, splash red wine vinegar, black pepper, salt and smash it up!

Drizzle the dressing over the chicken and pots.

Bake at 400 for 40 mins or until golden.
