Pineapple Chicken Macaroni Salad

Introduction

Great dish for a potluck or entertaining. The pineapple adds sweetness and the cabbage adds crunch! Feel free to add or take away pineapple or cabbage to your liking. Ingredients

    2 --20 oz cans of Dole crushed pineapple in heavy syrup, drain juice into a separate container
    1 --16 oz box of elbow macaroni
    1/2 cup of light mayo
    12 to 15 ounces of Tyson canned chicken breast ( I use 3 small cans)
    shredded cabbage

Directions

Drain juice from pineapple into a separate container. Cook macaroni. Combine macaroni, pineapple, mayo, chicken, and as much cabbage as you desire. Take pineapple juice and add to the mixture until you get your desired sweetness. Don't add all at one time or the salad may become too "soupy." Serve immediately or refrigerate and serve later. To me, it is best served chilled. Salad is good in the refrigerator for several days!
