PC "Baked Alaska" Cake

Ingredients

    Betty Crocker Devil's Food Cake Mix, prepared according to directions (use equal measure applesauce instead of oil)

    8 oz Fat Free Cream Cheese, softened
    1 c. Powdered Sugar
    2 c. Fat Free Cool Whip
    1/4 c. Semi-sweet Chocolate Chips, chopped
    1/4 tsp Peppermint Extract (or other flavor)

    2 c. Fat Free Cool Whip

Directions

Bake cake in glass bowl-shaped pan, 350 for 70-75 min, or until tests done. Cool in pan 15 minutes, remove and allow to cool completely, about 3 hrs. Slice horizontally in half, then each in half again to create 4 layers.

Combine cream cheese, powdered sugar, cool whip until smooth. Blend in flavoring, then fold in chocolate pieces. Spread evenly between cake layers, then spread remaining mixture on top and sides of cake. Frost with remaining cool whip, using spreader to form decorative peaks, if desired. Refrigerate at least 30 min before slicing for best results. Yields 16 servings.
