Rhubarb Jell-O Cake

Introduction

This recipe was always one of my favorites to make with my mom. This is my own, lower carb, lower fat version. You can mix and match fruit and jello flavors, or even use a different type of cake mix. For a fun twist, you can use cherries and chocolate cake. Just substitute diet cherry cola for the 7-Up! This recipe was always one of my favorites to make with my mom. Ingredients

    4 C fresh rhubarb, diced
    1/2 C Splenda
    1 lg package sugar-free strawberry Jell-O
    4 C mini marshmallows
    1 pkg yellow cake mix
    12 oz diet 7-Up

Directions

Preheat oven to 350 degrees. Lightly spray bottom of glass cake pan (9" X 13") with non-stick spray. Spread diced rhubarb evenly over bottom of pan. Sprinkle Splenda over top of rhubarb, followed by dry jell-o. Evenly distribute marshmallows on top of rhubarb mixture. Pour cake mix into mixing bowl and add 7-UP (DO NOT ADD EGGS OR OIL!) Use spoon or wire whisk to beat cake mix until smooth (do not recommend electric mixer as you may have a mess). Pour cake batter evenly over rhubarb and marshmallows. Bake for 30 - 35 minutes. Makes approx 18 2X3 inch pieces.
