Banana Pancakes

Number of Servings: 6

Ingredients

    1 c. flour
    1 tbsp. white sugar
    2 tsp baking powder
    1/4 tsp. salt
    1 egg, beaten
    1 c. nonfat milk
    2 tbsp. applesauce
    1/2 tsp. vanilla extract
    1-2 ripe bananas

Directions

Mix all dry ingredients together in one bowl and mix all wet ingredients together in another bowl. Put peeled bananas into a ziploc bag and mash, cut tip off and squeeze into wet mixture. Combine dry and wet ingredients and mix well, will be slightly lumpy. Makes 12 pancakes (6 servings of 2) Enjoy!
