Introduction

As a Vegetarian, it's important for me to get lots of protein early in the day so I don't get hungry and snack later on. This easy and delicious breakfast is packed with 17 grams of protein, which leaves me satisfied for a few hours. The delicious avocado and fresh tomatoes and onions liven up the dish. Ingredients

    1 Slice of Whole Grain Bread ( I use Oroweat Best Winter Wheat)
    1 Large Egg + 1 Large Egg White
    1/4 avocado
    1 slice jarlsberg cheese (should be 50 cal/slice)
    tomato slices
    onion slices
    salt and pepper

Directions

Makes 1 serving

1. Whisk together egg and egg white with a little salt and pepper.

2. Spray round or square tupperware with pam and pour egg mixture in. Microwave for 1.5 minutes.

3. Toast Cheese on Bread until melted.

4. Spread avocado on cheese, add the cooked egg, add tomatoes and onions and a touch of black pepper.

5. Best to eat with a fork.
