Dungeness Crab stuffed tomato

Introduction

Easy, delicious. For our family it is the main dish. I serve it with roasted veggies, and sliced fruit.

My family finds this to be a decadent treat during crab season.
Easy, delicious. For our family it is the main dish. I serve it with roasted veggies, and sliced fruit.

My family finds this to be a decadent treat during crab season.

Ingredients

    2 whole tomatos
    The juice from a wedge of a lemon
    4 oz Fresh Dungeness crab
    1 clove of garlic(I use roasted garlic cloves)
    2 oz of shredded low fat white cheddar cheese
    1 tablespoon of cheddar cheese

Directions

Preaheat oven to 350 degrees

Mix the crab, mayo, cheeses, garlic and juice from lemon wedge in a small bowl.

Cut the top of tomato off and hollow out the inside. Divide the crab mixture in half and fill each tomato with stuffing mix.

Place the stuffed tomatos on a cookie sheet and bake for 20 minutes - or until bubbly and tomato skin has softened. Top off with a quick broil to add a little crunchy crust to the top.
