Introduction

Nice, easy, fresh summer salad Nice, easy, fresh summer salad
Number of Servings: 2

Ingredients

    1 ripe tomato, diced large
    1/2 English Cucumber, sliced
    1/2 Vidalia Onlon
    1 Tbs honey
    2 Tbs rice vinegar
    10 basil leaves, chopped
    1 sprig fresh rosemary, de-stemmed and chopped
    1/4 tsp red pepper flakes (or to taste)

Directions

In a small bowl, combine all the ingredients from the honey down. Wisk and set aside.

In a medium bowl, combine the tomatoes, cucumbers, and onions.

Pour the dressing over the vegetables and combine.

Cover and put in the refrigerator for one hour or more.

Serves 2.
