White Chocolate Pound cake

Ingredients

    *Substituting different brands, etc, will change the nutritional value.

    -1 box Pillsbury Reduced Sugar Classic Yellow Cake Mix
    -1 Cup skim milk (I use Calorie Countdown 2%)
    -1/2 cup Promise Health Essentials immitation butter (5 calories/serving. Using margarine or butter will dramatically increase the calorie content)
    -1/2 cup white chocolate chips
    -3/4 cup egg beaters

Directions

1. Preheat oven to 350*
2. Melt the white chocolate chips on the stove, or in the microwave until smooth. You can stir in a little bit of vanilla extract to smooth)
3. Mix all ingredients in a bowl to make a thick, fluffy batter.
4. Pour the batter into 3 loaf pans coated with cooking spray.
5. Cook for approx 36 minutes, or until toothpick inserted in the middle comes out clean.
6. Let cool COMPLETELY before gently removing from loaf pans.
Makes 3 loaves that can be cut into 5-6 pieces.
(Nutrition info calculated if it's cut into 6 pieces. If you cut it into 5 it will be approx 180 calories...still not bad!)
