Baked Garlic Potatoes

Introduction

diced potatoes in olive oil and herbs diced potatoes in olive oil and herbs
Number of Servings: 8

Ingredients

    Potatoes, Carrots, Garlic, Tomatoes and spices.

Directions

~Preheat oven to 375*
~Skin, wash and diced potatoes.
~Cut baby carrots in half.
~Spread 2 1/2 Tbsp olive oil on bottom of 9x13" pan.
~Put Potatoes, Carrots, Spices and Diced Garlic in pan.
~Add Tomatoes, mix together. Salt and Pepper and bake in a preheated oven for 60 minutes or until a fork can easily be stuck in to the potatoes.
