Falafel Chicken w/ cucumer salad

Introduction

really flavorful chicken with a cooling cucumber salad really flavorful chicken with a cooling cucumber salad
Number of Servings: 4

Ingredients

    1/2 cup falafel mix (near east is very good and the manicheveitz brand is also good) it's about 1/2 apackage that you're using)
    1 egg, beaten with1 egg shell of water
    1 lbs boneless skinless chicken breats, cut into large chunks... or strips.


    5 kirby cucumbers, or 2 smallish english cukes cut in chunks
    1/4 cup fresh dill weed, minced
    1/2 cup fresh mint, mixed
    1 container low fat plain yogurt
    1 red onion, minced

Directions

Mix egg and water together in bowl
Add falafel mix to a ziplock baggie
Dunk chicken in eggwater mixture and drop into bag with falafel mix
Shake shake shake

Put chicken on cookie sheet sprayed with olive oil cooking spray.

Bake at 350-400 til cooked.

In a bowl, add garlic, onion, cukes, and herbs
Stir in yogurt and toss
Store in fridge until ready to serve.
